The olive harvest is a special moment every year at the Oio Vivo olive grove.
It is the time when months of work, care for the olive trees, and close attention to nature are transformed into the most important product — fresh, aromatic young olive oil. Although olive growing is deeply rooted in Istrian tradition, Oio Vivo combines the best of both worlds: experience and modern technology. This is why today we are able to harvest 15,000 olive trees on time, at the peak of their ripeness, while preserving the highest possible quality of the fruit.
Technology that respects nature
This year’s harvest was carried out with our permanent team of pickers and with the help of modern machinery — shakers with hydraulic platforms.
This advanced system embraces the entire tree and gently vibrates it, causing the olives to fall onto a large platform lined with protective fabric. The olives are immediately transferred into crates and transported to the mill — fresh, intact, and full of life.
