The end of the winter months, when the cold temperatures start to ease and the danger of freezing olives passes, means that the time for pruning has arrived. February is the month when we intensively begin spending time in our olive grove, with over 15,000 trees. Pruning starts in February and lasts for two to three months. Since we work with nature, we must adapt to the weather conditions it dictates and respect its rhythm. The entire process begins with observing the trees, followed by thinning the canopies, removing unnecessary water shoots, and cutting back overgrown or damaged branches. The goal is to allow the olive tree to grow as healthily as possible so it can produce as many healthy fruits in the autumn. We begin our activities early in the morning and finish late in the afternoon.
