The end of the winter months, when low temperatures begin to subside and the danger of olive tree freezing passes, signifies that the time for pruning has arrived.
February is the month when we start spending time intensively in our olive grove with over 15,000 trees.
Pruning begins in February and lasts for two to three months. Since it is all about nature, we have to adapt to the weather conditions it dictates and respect its rhythm.
The whole process begins with observing the trees, then moving on to thinning the canopy, removing useless watering cans, overgrown or damaged branches.
The goal is to allow olives to grow as healthily as possible so that they can produce many beautiful fruits in the fall.
